Those were the opening acts.
Now let’s see what we’re cooking up this Halloween.
1. Jack-o’-Lantern Stuffed Peppers
Who says pumpkins have to grow in a patch?
Orange bell peppers make perfect little edible jack-o’-lanterns. Fill them with savory meat, rice, and melted cheese, then let your pellet grill add a delicious touch of wood-fired flavor.
Unlike carving an actual pumpkin, you get to eat these when you’re finished.
What You’ll Need
- Orange bell peppers
- Cooked ground beef or sausage
- Cooked rice
- Diced onion
- Your favorite seasoning
- Shredded cheddar or Monterey Jack
- Tomato sauce or salsa
Build Your Pumpkins
Slice the tops from the peppers and remove the seeds and membranes.
Using a small, sharp knife, carefully carve a jack-o’-lantern face into one side of each pepper.
Combine the cooked meat, rice, onion, cheese, and enough tomato sauce or salsa to hold everything together. Spoon the mixture into each pepper and replace the tops.
On the Pellet Grill
Preheat your pellet grill to 350°F.
Place the stuffed peppers in a grill-safe pan and cook for approximately 30–40 minutes, or until the peppers are tender and the filling is completely heated through.
As the cheese and filling peek through the carved faces, your little pumpkins become progressively more ridiculous.
Which is exactly what we’re going for.
Pellet Pairing: Griller’s Gold Fruitwood Blend
Maple, cherry, and apple bring a mildly sweet smoke that complements the peppers while adding plenty of wood-fired flavor to the meat and cheese inside.

2. Spiderweb Smoked Pizza
Pizza night just got a Halloween makeover.
A little mozzarella, a few black olives, and some creative arranging turn your favorite pizza into a spooky spiderweb masterpiece.
And because we’re cooking it on a pellet grill, you’ll get that delicious wood-fired flavor along with a beautifully golden crust.
What You’ll Need
- Pizza dough
- Pizza sauce
- Mozzarella cheese
- Black olives
- Your favorite pizza toppings
Build Your Web
Stretch your pizza dough and add sauce and toppings.
Use thin strips of mozzarella to create several circles moving outward from the center. Add straight strips extending from the middle toward the crust to turn those circles into a web.
For the spiders, cut black olives in half for the bodies and slice additional olives into skinny pieces for legs.
Yes, you’re about to spend several minutes arranging tiny olive spider legs.
Commit to the bit.
On the Pellet Grill
Preheat your pellet grill and pizza stone, if using, to approximately 425–450°F.
Cook for roughly 10–15 minutes, depending on the thickness of your crust and your grill, until the crust is golden and the cheese is bubbling.
Keep an eye on your masterpiece. Those carefully arranged mozzarella webs may shift a little as the cheese melts, but that’s part of the fun.
Pellet Pairing: Griller’s Gold Fruitwood Blend
The maple, cherry, and apple blend gives pizza a kiss of wood-fired flavor without overpowering the cheese, sauce, and toppings.
3. Graveyard Smoked Queso
Every Halloween party needs a good dip.
And every good dip deserves a little drama.
This smoked queso is loaded with melted cheese, peppers, and your favorite seasonings, then topped with crispy tortilla tombstones to create an edible graveyard.
It’s the kind of appetizer people casually stand around eating until someone realizes they’ve consumed half the pan.
What You’ll Need
For the queso:
- Your favorite melting cheese
- Diced tomatoes and green chiles
- Cooked sausage or ground beef, optional
- Jalapeños
- Your favorite taco or BBQ seasoning
For the graveyard:
- Flour or corn tortillas
- Blue corn tortilla chips or black beans
- Green onions or cilantro
- Edible food marker, optional
On the Pellet Grill
Combine your queso ingredients in a cast-iron skillet or grill-safe pan.
Smoke at approximately 225–250°F for 45–60 minutes, stirring occasionally, until everything is melted, smoky, and dangerously easy to eat.
Build the Cemetery
Cut tortillas into tombstone shapes, lightly brush with oil, and toast them on the grill until crisp.
Once cooled, decorate them with an edible food marker.
Some suggestions:
- RIP
- BOO
- HERE LIES SELF CONTROL
Stick your tombstones into the queso and scatter crushed blue corn chips or black beans around them as “dirt.”
Add cilantro or green onion if your cemetery needs landscaping.
Classy.
Pellet Pairing: Griller’s Gold Pitmaster Blend
Hickory brings the smoke while cherry and maple add a little sweetness. It’s bold enough to stand up to sausage, peppers, and cheese without turning our queso into a campfire.

4. Shrunken Head Smoked Potatoes
Who knew potatoes could have so much personality?
These carved potatoes develop wonderfully wrinkled faces as they cook, making them a fun Halloween side dish that’s surprisingly easy to prepare.
And underneath those funny faces? A fluffy, smoky baked potato ready for all your favorite toppings.
What You’ll Need
- Small to medium golden potatoes
- Olive oil
- Kosher salt
- Butter
- Your favorite baked potato toppings
- Black olives, bacon, and shredded cheese, optional
Carve Your Characters
Wash and dry the potatoes.
Using a small paring knife, carefully carve faces into the skins. Create grooves for eyes, mouths, noses, and wrinkles, without cutting all the way through.
Don’t worry about making them perfect.
A few crooked smiles and mismatched eyes just give them more character.
Rub the potatoes with olive oil and kosher salt.
On the Pellet Grill
Preheat your pellet grill to 225°F.
Smoke the potatoes for approximately 45–60 minutes to build flavor.
Increase the temperature to 375°F and continue cooking until the potatoes are fork-tender. Depending on their size, plan on approximately 1–1½ hours total, checking smaller potatoes earlier.
As the potatoes cook, the carved areas darken and the skins begin to wrinkle.
Your little potato characters are officially ready for Halloween.
Serve with butter, cheese, bacon, sour cream, or your favorite baked potato toppings.
Want to give them even more personality? Add black olive eyes with a dab of sour cream and create funny smiles with bacon and cheese.
Pellet Pairing: Griller’s Gold Competition Blend
The maple, hickory, and cherry blend gives these potatoes a balanced smoky flavor without overwhelming all the good stuff you’re going to pile on top.
5. Monster Ribs with a Killer BBQ Glaze
Every Halloween party needs a monster. Ours just happens to come straight off the pellet grill.
We’re talking tender, smoky pork ribs coated in a sticky, sweet-and-spicy BBQ glaze that’s so good, your guests might forget they’re supposed to be saving room for Halloween candy.
And here’s where things get interesting. Once you’ve smoked your ribs to perfection, you can serve them straight off the grill or get creative with a spooky Halloween presentation.
How scary you make them is entirely up to you.
What You’ll Need
For the ribs:
- 2 racks of St. Louis-style pork ribs
- 2 tablespoons yellow mustard (optional binder)
- ¼ cup brown sugar
- 2 tablespoons smoked paprika
- 1 tablespoon kosher salt
- 1 tablespoon coarse black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- ½ teaspoon cayenne pepper (adjust to taste)
- ½ cup apple juice, for spritzing as needed
For the killer BBQ glaze:
- 1 cup of your favorite BBQ sauce
- ¼ cup honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1–2 teaspoons hot sauce, optional
Smoke Your Monster Ribs
Preheat your pellet grill to 225°F.
Remove the membrane from the bone side of the ribs if it’s still attached. Pat the ribs dry, then apply a thin coating of yellow mustard if desired.
Combine the brown sugar, smoked paprika, salt, pepper, garlic powder, onion powder, and cayenne. Coat both sides of the ribs generously with the seasoning mixture.
Place the ribs bone-side down on the pellet grill and smoke for approximately 3 hours, keeping the lid closed as much as possible.
If the surface begins to look dry, lightly spritz with apple juice.
Continue smoking for another 1–2 hours, checking for tenderness. The ribs are ready for glazing when the meat has pulled back slightly from the bones and a toothpick slides between the bones with little resistance.
Make the Killer Glaze
While the ribs smoke, combine the BBQ sauce, honey, apple cider vinegar, Worcestershire sauce, and hot sauce in a small saucepan.
Warm gently, stirring until everything is blended.
During the final 20–30 minutes of cooking, brush the ribs generously with the glaze. Let the sauce set until it’s sticky and glossy, but watch carefully to prevent the sugars from burning.
For the best texture, look for ribs that bend easily when lifted from one end and have tender meat that still holds to the bone.
Remove from the grill and rest for 10 minutes before slicing.
Now, Make Them Monstrous!
Here’s where you can have a little Halloween fun.
The Monster Rib Cage: Arrange two sections of ribs in a curved rib-cage shape on a large serving platter. Add roasted peppers or other colorful grilled vegetables in the center for a festive presentation.
The Graveyard Platter: Slice the ribs individually and arrange them alongside roasted potatoes, grilled peppers, and a few strategically placed rosemary sprigs for a spooky graveyard-inspired spread.
The Wicked Rib Tower: Stack your glazed ribs on a serving board, add a few roasted jalapeños, and let that dark, glossy BBQ glaze do the decorating.
Or skip the theatrics entirely and serve up a platter of delicious smoked ribs. We promise nobody will complain.
Pellet Pairing: Griller’s Gold Hickory
Hickory delivers the rich, classic BBQ smoke flavor that makes pork ribs irresistible. Its bold, savory character stands up beautifully to the sweet-and-spicy glaze, giving these monster ribs the kind of wood-fired flavor that keeps everyone coming back for another bite.

Make Halloween Frightfully Delicious
Halloween gives us permission to have a little fun.
Wear ridiculous costumes.
Decorate our yards with skeletons.
Buy enormous bags of candy and pretend they’re entirely for trick-or-treaters.
And turn perfectly respectable ingredients into jack-o’-lanterns, spiderwebs, and miniature graveyards.
But here’s the best part: these Halloween creations aren’t just fun to look at. They’re delicious foods made even better with real wood-fired flavor from your pellet grill.
Choosing the right pellets is part of the fun, too. Go bold with Hickory, add balance with Competition or Pitmaster, or keep things a little sweeter with Fruitwood.
So grab your Griller’s Gold pellets, invite over a few friends, and make something memorable this Halloween.
Because the best Halloween treats don’t always come in a candy wrapper.
Sometimes they come straight off the grill.
Happy Halloween from Griller’s Gold!
